I received this great recipe via email, and would like to share it with you all.

Curry Tuna Salad~~Ready in Just 20 Minutes!
8 oz uncooked elbow macaroni
2 tbsp major grey mango chutney (you can also substitute any mango chutney or apricot preserves)
.5 cup light mayonnaise
2 tsp curry powder
15 oz libby's peas & carrots, drained
12 oz chunk light tuna in water, drained
.25 cup chopped parsley
Cook macaroni according to package directions; drain and rinse with cold water. In a food processor, pulse chutney until there are no large chunks of mango. Add mayonnaise and curry powder; pulse just until mixed. In large mixing bowl, combine macaroni, mayonnaise mixture, peas and carrots, tuna and parsley, gently folding ingredients together with a rubber spatula.
